Buenos días!
Empecemos esta semana con unas Tortillas/Arepas de Yuca.
Les dejo una receta para hacer en poco tiempo, pueden hacer varias, refrigerar o congelar, e ir usando.
- 1 yuca cocinada (preferiblemente ya fría, para que sea más fácil de manipular)
- 1 cucharada de linaza molida (opcional)
- 2 cucharadas de harina integral
- Sal al gusto

Si tienen procesador, agreguen todos los ingredientes y procesen, hasta tener una mezcla completamente integrada. También pueden amasar con las manos.
Formen bolitas de un tamaño intermedio. Ubican una tabla, ponen la bola de masa entre hojas parafinadas o entre plástico arriba y abajo, y presionan por arriba con otra tabla. Hagan presión hasta ver el grosor que les guste en las arepas.
En un sartén caliente, engrasado con un poquito de aceite de oliva o coco lleven las arepas a asar hasta que este selladas por ambos lados.

Non potevo non postare l’ultima cena fatta ieri sera nella splendida città di Mykonos per concludere il nostro fantastico week end su quest’isola di cui mi sono profondamente innamorata 🇬🇷😍. Che dire, i miei attenti studi su dove mangiare quando sono fuori casa, anche stavolta hanno dato soddisfazione e non si sono rivelati inutili. Come secondo piatto:

I remember posting a similar pic to this about 8 months ago and thinking I was so strong then.⁣ 💪🏼

I looked at that old picture after it was taken and realized that I couldn’t even get all the way down into push up position. Here I was thinking I was so strong then. Now, fast forward 8 months of consistent end intentional work and here I am! Alllll the way down! 🙌🏼 And holding it! (May be a small feat for some, but this was a big deal for me!⁣)

Now, while I still have to modify sometimes, I CAN SEE THE CHANGE!!! It’s happening, people!! 🐛🦋⁣

I decided to give myself some grace. No one ever got anywhere important without some type of struggle. I realized that there isn’t a timeline on fitness. While I have some hefty goals for myself and timelines that I am working towards, as long as I am moving forward daily, then I am winning!! 🏆⁣
